Ingredients
- 1 1/4 cup Champagne
- 1 cup Pomegranate juice
- 1/4 cup Rum
- 2 packets of gelatin and 3/4 teaspoon
Directions
In a small sauce pan, sprinkle the Knox and pomegranate and stir until completely dissolved.
Over medium heat, mix the gelatin and juice until it’s disolved, about 5 minutes. Let sit for 1 minute, then stir in the champagne. In a small, nonreactive baking dish or loaf pan, pour a few drops of cooking oil (grapeseed works well) and wipe out with a paper towel, coating the entire vessel with the barest layer. Pour jelly mix and set to chill in refrigerator for at least 2 hours and up to overnight.
Trim edges with a sharp knife and cut into 1 inch squares and ensamble your shots with spoons and a tray. You can garnish them with lime zest and a blackberry.

Is there any kick from the champagne? I don’t metabolize alcohol very well, so just a sip of wine has an effect on me. But they are very attractive for a unique treat.
Hi Judi, Thanks for reading! The Champagne does not loose it’s alcohol content. I would suggest to make a virgin one or replace some of the Champagne for juice or water. Have a great New Year’s!

What a great idea. However, if you want to retain the ‘kick’, the first mixture, with the rum, shouldn’t be allowed to get too hot while dissolving the gelatine or this will certainly lose some – but by no means all – of the alcohol. But if you want alcohol-free you’d have to leave out the rum (substituting rum essence for the flavour?) and I believe alcohol-free ‘champagne’ is available. Is there any point in making it in this case? With the ‘real thing’ as described here, does the champagne keep its fizz? Theoretically it should if the liquid is cool enough when it’s added. If it is fizzy this must be a real party hit – as Heston Blumenthal’s jelly miniature whisky bottles.
Hi! Thanks for your comment. The Champagne bubbled up because I added it when the mixture was hot. But that is a great idea! I’m going to try another batch where the champagne does not fizz up to try to get bubbly jelly shots! Thanks and happy New Year 🙂
